Step 1: Classify
The purpose ofthe mango classification is to create uniformity when processing, helping the finished product to achieve the best aesthetics. Sort by shape and size.

Step 2: Wash and slice mangoes into pieces
Mangoes are cleaned with water to remove dirt on the mango skin, helping to ensure the best hygiene.
Mangoes are peeled and sliced into pieces, seeds removed. The size of the mango pieces is not too thin or too thick to help increasing the contact of mango pieces with drying heat, reduce the time as well as create the product shape.
Step 3: Soak in the warm water
It helps to limit pathogenic microorganisms.
Step 4: Soak in sugar solution
This step is not applied for free-sugar dried mango.
Step 5: Drying
Arrange mango slices on each drying tray and move them to drying room.
Step 6: Packing and label
We can pack in bulk (10kgs, 20kgs per a carton box with PE inside) or in retail (200gr, 500gr, 1kg per a zipper bag) with your private label.
